Sugar free banana muffins

 

INGREDIENTS:
2 large ripe bananas
2 medium size carrots, finely grated
75g unsalted melted butter
1 egg
2 tsp cinnamon
400ml plain flour
2 tsp baking powder
50ml So good coconut milk

Instructions:

1. Turn your own to 200 degrees Celsius.
2. Mash the bananas in a bowl using a fork, mix well with grated carrots, melted butter and the egg.
3. Mix cinnamon, flour and baking powder well in a separate bowl.
4. Grease a muffin tray.
5. Quickly add the flour mixture into the banana mixture using a fork, mix with a fork until combined, then add coconut milk gently.
6. Scoop one heaped tablespoon into each muffin cup, should make about 12 muffins. Divide whatever mixture you have left across all 12 muffins.
7. Bake at bottom of oven for approx 20 minutes.
8. Remove from muffin tray and cool on a rack.

These muffins can be enjoyed as they are or cut in half and filled with whipped cream and berries making an excellent mini cake for the little ones first birthday.
